Today I made a best super foods cake….which was not only mind bendingly delectable, this raw cake is also power packed with nutrients and rocket fuel (you have to beware of how much you take as it could lead to you spiralling up to space).
As I mentioned in yesterday’s post on cancer fighting super foods: spirulina, I am helping my friend Ida recooperate from a broken back. I hope that my super foods menu will ensure she is in downward facing dog ASAP.
So here is the best super foods cake:
Boil some water and take it off the stove. Put 150g coconut oil/butter (read more about this awesome food here) in another dish, and put it in the boiling water (A Bain Marie).
Soak 100g of goji berries (another of my favorite foods…read more about them) for 20 minutes, and then add them into the mixture when the coconut oil is melted.
Add in 150g of raw chocolate powder.
Add 100g of lucuma.
Add 3 teaspoons of agave nectar.
Blend it up. Put it in a dish or small pie plate and smash it down. Then refrigerate it for a couple of hours (Chances are you won’t make it that long…but do try).
And presto, you have a cake that is so amazingly gorgeous you won’t believe that it is healthy and good for you. When Ida’s husband came home and had a taste, he was truly shocked. Everyone is. We are taught from a young age that all of the yummy foods are bad for us and all of the nutritious foods are horrendous.
Now, with raw cakes, we know that you can have your cake and eat it too…
There is a whole world out there of delicious treats to transform our bodies and minds. Believe me, I love chocolate and I love an amazingly rich dessert, but I can’t see why I would ever need sugar again with this cake (and others, which I have gotten from the book Raw Magic).
Goji berries are the highest source of vitamin C, a sexual tonic, and one of the best cancer fighting super foods. Just ask the Tibetans.
Raw chocolate is one of the best sources of magnesium, which is the number one most common deficiency in the Western world. It also contains unique chemicals that make us feel high (hence the rocket fuel). Read more about how to make your own raw chocolate.
Coconut oil is one of my favorite super foods. I love butter but I don’t eat dairy, yet coconut oil gives me that creamy buttery-ness, as well as a vast array of nutrients and healing benefits.
Lucuma is power packed with fibre, vitamins and minerals. It has lots of beta-carotene, niacin (B3) and iron. It is also considered the Gold of the Incas, and I can attest that once your friends taste this cake, it will be a gold rush to your place.
Agave Nectar is my favorite healthy sweetener. It tastes better than sugar (by a long way) and won’t raise your blood sugar levels.
I actually added a few sunflower seeds and almonds to mine…you can play around and find out what works best for you.
Try this cake if you dare. I am warning you now, you will not only experience pure bliss, but you might end up on planet goji berry, which is located somewhere in the chocolate cosmos.
