Best Super Foods: Apples

Thursday, May 1st, 2008

If I feel dehydrated and water isn’t doing the trick, I always grab an apple. I always have one in my bag waiting to eat if I feel peckish (the English word for “I need a bit of a snack…”).

New research is showing that this juicy fruit will truly keep the doctor away, including the cancer doctor.

A study published in the Journal of Agricultural and Food Chemistry has identified a dozen compounds called triterpenoids in apple peels that either inhibit or kill cancer cells in the lab. Three of these triterpenoids have never been identified before. Dr. Liu, who led the study, sys they keep cells from proliferating, which protects against human liver, colon and breast cancer cells.

Another study of 10,000 people, found that people who ate the most apples had a 50 percent lower risk of developing lung cancer. Scientists think that this is most likely due to the high levels of the flavonoids quercetin and naringin in apples.

Besides cancer protection and the juicy crunch it provides, here are 10 other reasons to include eating an apple as part of your daily activities.

Crunchy Apples, Strong Bones
French researchers discovered a flavanoid called phloridzin that is found only in apples. It may protect post-menopausal women from osteoporosis and may also increase bone density. Apples also contain Boron, which strengthens bones.

No More Asthma Attacks with this Super Delight
A study has shown that children with asthma who drank apple juice on a daily basis were less likely to suffer from less wheezing than children who drank apple juice only once per month. Another study showed that children born to women who eat a lot of apples during pregnancy have lower rates of asthma than children whose mothers ate few apples.

An Apple a Day will keep you Sane!
A study on mice at Cornell University found that the quercetin in apples may protect brain cells, and defend against the dreaded but seriously increasing Alzheimer’s disease.

Happy Cholesterol
The pectin in apples lowers the LDL cholesterol. People who eat two apples per day may lower their cholesterol by as much as 16 percent. I have only been eating one, but as I have done the research for this article, I may enjoy a second.

Balanced Blood Sugar Levels = A Balanced Life
The pectin in apples supplies galacturonic acid to the body which lowers the body’s need for insulin and may help to prevent and manage diabetes. Keeping blood sugars balanced is one of the most important things we can do to stay healthy, live long and feel fantastic.

Weight Loss
A Brazilian study found that women who ate three apples or pears per day lost more weight while dieting than women who did not eat fruit while dieting. And we all know that if we are overweight, it is time to get in shape and lose weight!

But remember, if you are going to drink apple juice, you may prefer to juice you own apples, as even organic apple juice is pasteurized (seriously heated) which kills off a lot of the vital goodness. Further, apples are near the top of the list for foods that are most essentially organic. Perhaps it is due to their thin skin, but apples are more likely to absorb pesticides.

How to Make your Own Raw Chocolate

Monday, April 28th, 2008

I have talked about chocolate a few times on this site, but I just have to talk about it some more because I am so incredibly excited about the ecstatic feeling I get when I eat my home made raw chocolate. Read more about my encounters with raw chocolate…

The Healthiest Food on the Planet
Recently I have started making my own sugar free, vegan, raw chocolate, and it is one of the most incredible culinary discovers of my life! It tastes far better than any chocolate I can buy at the shops, and it is one of the healthiest foods on that we can eat.

Everyone Feels the Jolt

Even the biggest sweet tooth junk food eaters I know are getting excited about this raw chocolate since trying mine out. No one can believe how incredibly divine it tastes. Not only that, it really does give you a boost in energy and life force. I actually feel a hit that is better than caffeine when I eat it.

Everyone feels good when they try out the chocolate. I now have so many friends and clients who are on the raw chocolate bandwagon. Many of them are not people who are normally obsessed with healthy, raw foods. But since trying my raw chocolate, they are hooked on the taste, the health benefits, and the ecstatic jolt they receive when eating it.

Here is my mind altering recipe:

Raw Cacao butter
Raw Cacao powder
Mesquite
Agave Nectar (yes…only four ingredients, but you won’t believe how it tastes!)

Put boiling water in a bowl. Put the cacao butter (how ever much chocolate you intend to make) in another bowl, then set that in the bowl with the boiling water. This will ensure that the cacao is not heated above 116 degrees f, which is the point at which the molecular structure begins to change. Thus, if it is heated to a temperature under 116, it is still considered raw.

Make sure that you break the cacao butter down into tiny bits, otherwise it will take ages to melt.

Once the butter is melted, pour in half the amount of chocolate powder. So if you melted 2 grams of butter, put in 1 gram powder.

Now put in that same amount of mesquite. Mesquite meal is a traditional Native American food produced by gathering ripened seed-pods from the mesquite tree and grinding them into a fine powder. Used as a staple food for centuries by desert dwellers, this high protein meal contains good quantities of calcium, magnesium, potassium, iron and zinc, and is rich in the amino acid lysine as well. It has a sweet taste that will give your chocolate a kick.

Add as much agave nectar as you want. Agave nectar is an incredibly delicious natural sweetener that will NOT make your blood sugar levels spin out of control. It is actually the same plant that tequila comes from. Read more about Agave and other healthy sugar free alternatives.

Now take a rubber ice cup tray (you can use a plastic one, but it can be difficult to get the chocolate out of) and load it up with chocolate. Put it in the freezer, it should be ready to eat in about 30 minutes.

That is it! It is the easiest thing in the world, and it is so incredibly delicious that I cannot begin to describe it! And it is chocolate that is seriously, amazingly good for you.

Some alternative recipes that I use are:

Instead of using mesquite, grind up sunflower and pumpkin seeds and add them.
You can also use lucuma, which is another super food fruit from peru with a range of healing benefits.
Add some chilli powder read more about the super food power of chilli…
Add some bee pollen discover more about why the oldest people on the planet eat bee pollen!

I am telling you… when I eat regular dark chocolate with sugar, it is not nearly as delectable. I cannot recommend highly enough to buy your own raw chocolate and make it yourself.
